Gluten-related disorders are a growing concern, but only the tip of the iceberg in terms of understanding how diet affects health. The different ways that gluten can interact with the body provides a framework for understanding the roles of diet, genetics and microbiome in determining overall health. While there is much that remains unknown and microbial therapeutics (such as fecal transplant) are in their infancy, providing evidence-based advice regarding dietary choices can improve patient health and longevity.
