Millet: A Naturally Gluten-Free Grain
Millet is a naturally gluten-free grain that can be used as a whole seed (to replace rice for, example) or ground into a flour to be used for baking. It is a cereal crop that has been grown in India and Africa for hundreds of years, but only recently became popular in the United States. It is rich in minerals and protein, with 3 grams of fiber and 4 grams of protein per ¼ cup. Bake with it, try it out as a breakfast porridge or as a replacement for corn-based polenta.
